Heather's Thoughts on a Southern Brunch

When you live in the South, there are just certain foods that are always served at any bridal/wedding shower. Things like sausage balls, quiche, pimento cheese dip, and benedictine sandwiches are just a couple of them.

And if you were in our house growing up, or have been to any event my family's catering company has hosted then you have most definitely had one of our brunch appetizer staples - mini sweet potato biscuits with country ham. They are delicious and so easy to make!

It all starts with my soft sweet potato biscuits that are made with fresh sweet potato puree and baked in a cast iron skillet. This can be done up to 2 days before your event, saving you some time if needed - yay! Then you just slice the tiny biscuits open with a serrated knife, place a couple of slices of salty country ham in between, pop them on a platter, and serve!

There is something about the slightly sweet biscuits that are so soft and tender that pair well with the salty country ham. And making them in bite-sized portions makes them irresistible and you come back for more. Let me show you how easy it is to do!

STEP 1 - prep the sweet potato biscuits according to the recipe. I like to use a smaller biscuit cutter - about 1-1.5" for these to make them small and bite-sized. Perfect for sharing and a brunch appetizer!

Since my family and I have made these so many times for events, parties, and gatherings...we have figured out some ways to prep ahead and store to save some time.

If you would like to make these far in advance or have a lot leftover you would like to keep for another event that is further than 2 days away, then this is how we have found to freeze them the best (ps - they freeze beautifully!)

  • Place all the biscuits in an airtight container and wrap them with plastic wrap several times
  • Place in the freezer for up to 6 months
  • When ready to serve, remove from the freezer and place in the fridge for 24 hours to thaw
  • Then pop in a 200-degree oven for 20ish minutes to warm back up. Serve warm on a platter for your guests!

  • 1 recipe for soft sweet potato biscuits
  • 12 ounces of thinly sliced country ham

Instructions

  1. Prepare the biscuits according to the directions in the recipe linked. Let cool completely.
  2. Carefully slice each sweet potato biscuit in half horizontally.
  3. Remove the ham from the packaging and slice it into sections that will fit appropriately on each biscuit. Place a slice of country ham between the two halves of each biscuit.
  4. Place on a platter and serve.

Notes

  • The biscuits can be made up to 2 days before making this dish. Just keep sealed in an air-tight bag until ready to assemble.
  • You can make the biscuits smaller (around 1-1.5" diameter) for a more bite-sized appetizer or make them into a normal biscuit size(2-2.5"). That will determine the number this recipe yields.
  • You can also serve it with a slice of white cheddar cheese (such as Kerrygold) and a thin layer of raspberry preserves to add some different flavors to the sandwiches.
  • Keep leftovers covered in the fridge for up to 2 days.
